Ingredients:

- 1 lb. ground beef (80% lean, 20% fat)

- Salt

- Black pepper

- 4 brioche buns

- 4 slices American cheese

- 1/4 cup mayonnaise

- 2 tbsp. ketchup

- 1 tbsp. sweet pickle relish

- 1/2 tsp. white vinegar

- 1/2 tsp. granulated sugar

- 2 leaves iceberg lettuce

- 8 slices tomato

- 1/4 cup finely diced onion

Instructions:

1. Preheat a cast iron skillet or griddle over medium-high heat for about 3-5 minutes.

2. Divide the beef into 4 equal portions (4 oz. each). Form each portion into a 4-inch patty about 1/2 inch thick.

3. Season both sides of each patty with salt and pepper.

4. Toast the buns until golden brown in the skillet or on a separate griddle.

5. Cook the patties for about 2-3 minutes on each side or until they're well browned and cooked to your desired degree of doneness.

6. Add a slice of cheese to each patty and cover the skillet with a lid for a few seconds to melt the cheese.

7. In a small bowl, mix together the mayonnaise, ketchup, pickle relish, white vinegar, and sugar to make the special sauce.

8. Spread a tablespoon of the special sauce on the top bun and place a lettuce leaf and 2 slices of tomato on the bottom bun. Sprinkle with a little bit of the diced onion.

9. Place a patty with melted cheese on top of the tomato slices and add more diced onion if desired. Finish with the top bun.

10. Serve the burgers with fries and more special sauce on the side if you prefer.
